Kebab
I made some kebab last night for dinner. There is always sometimes during the month I would crave for meat, and I always don’t know why. Kebab recipe has quite a long and interesting history, if you like to find out more, click here =)
Now, I am going to show you my own way of making kebab at home ![]()
First, you need to prepare some ’satay sticks’ and sock them in water. The reason behind is to prevent the sticks getting burnt before the meat is cooked. I am not quite sure how true is that, maybe I need to ask Cooknengr, he may suggest something.
Meantime, I prepared some veges. I used mainly capsicums-orange, green and red capsicum; and onion as well.
Cut the chicken breast into cube-shaped. Marinate them with a little abit of soya sauce and oyster sauce. I did sprinkle some Nando’s hot peri-peri grind on the chicken. The reason is I think the heat would boost the flavor, and it may taste/smell more authentic. Actually, I also not quite sure if this method works..maybe it is pure phychological(?) Not sure? Easy! ask Cooknengr again. =P
Beside chicken cube, I did get some beef cube. I did not marinate nor pepper and salt the beef as I wanted to keep its original taste.
Now, this is my favorite part–putting the meat and vegetable in the sticks.
No particular oder required. But I presonally prefer vege at both ends as they give good support, preventing the meat from ‘falling off’ =)
As you can see here, why I used few types of capsicums–they gives nice combination of colour.
Heat up the gril-pan and place the kebab on the pan. The time required for cooking depends upon individual household gril.
This is the final result… tee hee hee =)
By the way, you can have it with rice or any type of carbohydrate you like on that particular day. We had kebab with cheese, garlic baked potato.

carcar: beside grill, you can use pan fry as well, you just need equal time and heat for each side of the kebabs. No worries

Ok, since you are not using direct heat, soaking the stick in water is not necessary. In fact, if you do it right, even with direct fire.
Looking at the beef,the cuts looks like muscular, tougher cuts for slow cook, stewing/braising instead of griling,the membrane gives it away, . Kebab I’d use tender cut like premium fillet mignon or cheaper loin which is less exercised part of the cattle.
Pic 5, the chicken is touching the beef, cross-contamination, young lady. Chicken needs to be cooked to higher temp than beef. If presence, Salmonella which now get onto the beef cube may not be destroyed when the beef is cooked. At your age, that’s okay, your immune system can take it, but you might want to observe safe kitchen practice when there are young children or elderlies in the guest list.
cooknengr: thank you so much for your help. Good advise. My friend simply pick the beef..Thankfully we all still young, can chew and our immune system is strong enough..so we didnt get killed =) But guess what? Today is HOT day! and i think the heat is killing me softly…=)
