Pseudo Fish Katsu with Medium Short Grain Rice

Taaa Daaaaa!!! Another food post! =) This is special post requested by Carcar. I told her I would prepare my own style of fish katsu.. There you go~!!!
You need crumbed fish fillets.

Bake the fish fillet in oven. 270 degree celcius, 15-20 minutes on each sides. You will need longer heating time for frozen fish.
While baking the fish, you can boil the rice. For me, I microwaved my rice, as usual =) I use medium shirt grain rice for more ‘authentic’ Japanese dinner.
I found short grain rice trapped more water and in taste wise, it is more caramelised.
Meanwhile, you need some onion, chopped small and brownish them on lightly oiled frying pan.
The onion is then added to eggs. The amount of eggs used depend upon the amount of fish fillets used. I think in this case, 1 fish fille = 1 egg.
Stir the onion and egg. Mix well. Remember, NO need SUGAR or SALTS. I use onion as it increases the crunchiness of the fish filler. Plus, onion caramelised the fish and egg naturally.
When the fish is baked, heat up the frying pan on medium heat. Place the fish fillet on the pan like this:
and then, wrap it up carefully.. If you want to speed up your cooking, then you can increase the heat at this stage. I personally like to cook my egg ASAP so the chrunchiness of the crumbed fish fillets can be preserved.
Turn the fish fillet… I like the egg a bit brownish =)Once the fish fillet(s) are done, you can place them on choping board, so it will cool down a bit.

Use a sharp knife and cut them into pieces like this:And then, place them nicely on the rice. This is our simple student-style dinner. I did not add any sauce nor prepare miso soup. I think this is alright. But if you can suggest anything else, that would be great!

Thanks and good luck =)

Scratch that! You dont need luck in this simple preparation. trust me! ;)
